Grilled pizza fail. Help!
« on: August 16, 2018, 08:40:16 PM »
I found an old thread on here regarding a grilled pizza recipe and thought Id give it a shot.  It was an old Emeril recipe that I wrote out below.

I fired up the chimney starter, got my coals nice and hot, dumped them in and placed the grate down with a pizza stone I. Top of that.  Per the directions, i par baked one side, flipped it over, topped it and then put the lid back on.

While still tasty, the cheese didnt have time to brown before the bottom would burn.  How do I get heat on the top in a standard Weber kettle?

2 1/2 cups AP flour
1/4 semolina
1 cup warm water
I packet ADY yeast
1 Tbsp olive oil
2 1/4 tsp salt
1 tsp sugar

Did you have the charcoal behind the rails as you would for roasting meat, or spread out all over the bottom?
