A laid back November Saturday watching football.

Lacking inspiration, I consulted with Icelandr on what to make.  He advised Caramelized Onion, Pancetta and Mushroom.  Here is my interpretation. 

Followed by Salami, Yellow Pepper, Mushroom with PSLM Mozz and a Margherita with Taleggio.  Not sure why the last picture is so bad.  The dark spots are basil which was not black in person.

Very Nice Scott . . . . Now why havenít I tried a Margherita with Taleggio, I love the cheese! It is now on the list! We almost had a long distance bake together, I was doing Prep while you were baking, and two interpretations of a similar set of ingredients, good fun, good food! Your oil container was pointed out, heavily perhaps, to Sharon, who perhaps was mor intrigued in going to Montepulciano to purchase it!

The taleggio was a bit salty.  Next time I might try half and half with fresh mozz.

That looks like one of your favourites, but I donít recall the toppings . . . .looking forward to seeing some more . . .

Arne and Gregg, you are both to kind.  It was a bit burned on one side.  The bottom was still very nice though.  Sausage and Mushroom.  The crust was super soft and tender, very good past the blackened spots.

Thank you Crawsdaddy, Greg and Arne.  The biscotto definitely cooks differently.  Heat and flame management are still key in the Pizza Party oven.

Jack:  I donít have any other oven experience but this one has a fine line between success and just ok.  If I put on a piece of wood for top flame and dawdle to long over a glass of wine, the top flame gos and I donít get the nice lepoarding.  If I throw to much wood on for the top flame, the bottom burns to quickly.

I used to cook pizza in a bigger WFO when I was a kid and it was the same there.  One needs to learn how to manage the heat and the fire in order to cook good pizza.  I've since also cooked pizza in a gas fired oven and again the same.  In my electric pizza oven it's also similar, except for when cooking at lower temperatures (around 300C) where it seems pretty much automatic.  I wish I could get my electric oven to perform the same at 500C... :)  There would be something to be said for just setting the temperature to 500C, wait a while, throw the pizza in and after a minute pull out a perfect Neapolitan... :D

As the song goes, A Rainy Night in Georgia.  What should we do but make pizza!  Four doughs, two IDY two with Ischia starter.

In order
Salami, Mushroom, Red Pepper,IDY
Scarpetta, Ischia
Sausage and Mushroom, Ischia
Veggie, IDY

With apologies to Franco Pepe and kudos to Arne Jervell, my interpretation of Scarpetta following Arne's recipe.  Perhaps it needs a bit of tweaking.  Also, as always fire management is crucial.  I let the fire die down just a bit to much in the cold rain.

First picture is of my plethora of toppings and the last is having fun in the rain!

Wow Scott, two different batches of dough, more experiments with toppings AND cooking in the rain! The pizza looks great, obviously watched carefully by Pulcinella. What was your take on the differences between the two doughs? I am saving the adventure into starters and Bigas until I am more mature, I have my hands full with simple stuff!
The evening looks like a success, I would think there are leftovers, so wish I were there to assist with eating . . Oh, and imbibing . . .
