Best Foraged California wild mushrooms for pizza

list your top 5-10 favorite foraged wild mushrooms toppings for pizza and extra tip at the bottom!

1- Fire morels
2-fresh baby porcini
3- Chanterelles
4- Matsutake
5-Black trumpets
6- Tuber belisporum from Marin county
7- baby hedghogs
8- The Prince Agaricus Agustus
9- Candy cap for dessert and savory pizza
10- cauliflower mushroom

tips, put dried and crushed up mushrooms in your dough- porcini, black trumpet and candy cap do well......

Chanterelles (Girolles)
Winter chanterelles (Yellowfoot)
Black trumpets
Hedgehog mushrooms (both regular and terracotta)
Prince Mushroom/Horse Mushroom (A. augustus, A. arvensis)
Shaggy Parasol
Bay Bolete
Saffron milkcap
Ceps/Porcini (B. edulis, B. aureus, B. reticulus, B. pinophilus)
Hen of the woods (Maitake)

Morels are overrated imho.

Would love to try green-cracking russula and caeser mushroom sometime as well as “lobster” parasitised mushrooms.

I have only tried ceps, chantarelles and  winter chantarelles on pizza so far. All were excellent, the winter chantarelles had the most intense flavour.

Piezone, I think I will try some russulas next, they can be rather peppery so I think would be good. Also the peppery bolete should I find them

it rained hard in california, and I scored on my pilgrimage to the fungi grounds!
most mushrooms were Chanterelles, Hedghogs, too many lobsters and many logs with oysters
notable edibles were the seasons first perfect Porcini, Pigs ears, perfect honey mushrooms, rare Fistulina Beefsteak fungi, and some medicinal Gandoderma Oregonense!
Here is my son and friends during our epic foray- gaurentee I have more wild mushrooms than any one of the 35 million californians
pizza party this sunday!  But I may just kill a heritage turkey and make corn bread chanterelle stuffing and dry the porcini and put the dried procini under the skin of the turkey during cooking......

the mushrooms ground was wet, dripping from the canopy and perfect timing as usuall, the season is now while everyone else is in fire season lol
