whats your outside temp in Buffalo incl wind conditions?

whats your process for turning on the oven?

try changing your propane tank.

iirc, i read elsewhere about ppl changing out their regulators

Surprisingly little wind. It has been 20-30F outside. But that should not be the issue. Do you know what regulator people are changing to? I am using the stock one that came with the oven. I just ordered a 0-20 High Pressure regulator. I know it could be too much but I will slowly turn it up.

Bad decision putting a high pressure regulator on a system designed to run at 11 inches of water column - I hope you don't hurt anyone or burn your house down....

Focus is NY style but do others too
Preferred Flour (for NY pies) is All Trumps BB
Preferred temperature for NY is 550F, for NP 900+F
Preferred type of yeast IDY

It fits snugly.  Unlike the bbq cover I have on my Blackstone, it will keep all the dirt out when the gardener goes by with a leaf blower.
Sorry Jonas, last question. The one I found looks different enough I have to ask if this (for 70x70) is what is working well for you. Thanks in advance.

That is NOT the cover I have.  There is one made specifically for the Ardore.  It came up as an available accessory as I was going through the purchase process.  It DOES exist, but it may be tough to find on their website

Looks great.  Can you tell me dough ball weight and final diameter of this?

I have been stretching to approximately 12- 13" with 250g balls and wondering if I need to reduce diameter or increase dough amount.

I'd love to hear or see pix/videos from members here who've been using the Ardore with NG...I want to see if the reduced flame ( was it reduced?)  I saw a few posts back is a frequent concern with NG...  In other words, will the NG give flames like in Don Luigi's video above??


Most posters here have used LP, but for me, the NG is a major selling point.

Mine is NG, Bill. I don’t know how my flame a few posts above compares with what you would like to have but I was happy with it. Come to think about it, I never touched the gas control. Kids ran it on medium about 30 min for first heating of floor then turned it up “all the way.”


You turn out some of the best pizzas on this forum. Undoubtedly, you have a much smaller amount of improvement on the ‘what’s possible’ scale, as I imagine it, than most of us here have.

With regard to what a deal the Ardore is...I just finished finished my seventh round of chemo since July 10. The protocall I am being administered consists of 2 IV bags, two days a week, 3 weeks in a row, followed by a week off needles and IV bags. The price is astronomical and covered nicely by insurance.


Part 3 of this concoction is a pill I take at home every night 21 days of every 4 weeks. It is also the maintenance drug I will be on every day of every month for the rest of my life once my stem cell transplant is successfully acompleted. Each pill costs 50% more than the Ardore oven. I have taken 147, so far, since July 10. The box for round 8 arrived today. $20,328 for which we pay $40 co-pay. The 2 meds administered by IV are quite a bit more expensive.


Lately, each night ahout 9:00, with all the fine pizzas I see on this thread and how quickly people begin turning out great pizzas with it, I think to myself as I swallow the pill, “That’s approximately equivalent to 1 1/2 Ardore ovens.” Perspective and values have changed here somewhat since this began mid-June. If only insurance covered the Adore. ;D


My point is: the price and customer service are fantastic, but only if you have a use for such an oven.

Thanks for the nice comments everyone! Yeah, the Ardore is a superb oven. I am using - as some of you might know - also the Pizza Party Woodfired 70x70 since quite a few years and I would have a hard time to tell difference between the Pies the Ardore puts out and the woodfired ones. Bake time is about 10 sec. longer in the Ardore compared to a perfectly heated WFO but stiil 55-65 seconds is amazing!
As for the flame - I am using standard Propane Gas Tanks we get here in Germany. I have the Gas full on all the time and try to have the Saputo Stone not below 470*C. I am preheating the oven for about 40-45 Minutes this time of the year (about 0*C here in Germany right now).

I am using 270 gr. Balls and stretch by the feeling. I don't even know what diameter my Pizza's have. I guess they are around 30cm which is more like 12.5".

As to your nice compliment...thank you for those kind words, though there's still so, so very much progress I hope I can make. I was thinking of how good it would be to have the reliability of an NG Ardore last night when my propane started to run really low (or maybe it's a regulator issue) mid-bake on the Blackstone  last  night while I was in the kitchen...I came out to way too little roar..uh, oh. The pie turned into a salvage project and all things considered was okay. I do see an Ardore in my future, and am learning  and watching everything I can about it.
