Anyone know how to get a crust like mountain mikes?

It looks a LOT like Topperís pizza here in Venura county.  Itís definitely docked,  probably not rolled.  Itís an American-style pizza with a properly tuned conveyor oven bake.  Itís what the major delivery chains should be making, but donít.  The conventional wisdom is that you cannot duplicate a conveyor oven bake at home, but thatís not a bad thing IMO.  If I were trying to make something in this ball park Iíd suggest looking at the Papa Johnís clone formulation with a thickness factor of 0.10 or greater, docked.  Iíd bake it in a lightly oiled cutter pan, just to differentiate it from NY-oriented pizzas baked on stone or steel.

Thank you for the pictures it looks exactly the same and now I could see it is definitely docked. It is for sure cooked on a conveyor it is from the chain Mountain Mike's. It's just nice sometimes having a crust like that edge to edge with toppings.
