Neapolitan Pizza with Pizza Party Ardore Gas Oven

It‘s a long time since my last post but my Pizza obsession is still glowing! I had the oppurtunity to toy around with Pizza Party‘s new Ardore Gas Oven before its final release in the last weeks/month and what can I say? That oven rocks! It‘s light weight, portable, gets smoking hot and bakes some damn fine Pizza. It‘s still basically my old recipe with Sourdough (Ischia) and Caputo Pizzeria! I am mostly in the 65-68% Category these days, 21-24 Hour Room Temp ferment and about 6-10% Sourdough (Temperature dependent). Check this video of tonight’s bake and also the pics below that I snapped in the last month. If you are looking at something portable that can bake a great Neapolitan in 50-65 seconds - this is your oven!

Danke Markus. Nice to see you are back and  active in forum again. Yes I "still" have the Pizzeria in Kissingen but I sold it a few weeks ago. As soon as the bank sends me the Money, I am going to open up the next Pizzeria in Coburg. Although I made good money in EUERDORF, I think I could make much more in a big city without too much delivery. that's Why

Another bake with the Ardore! Holy %$#, I love this oven more with each use! Not my best dough though. Quite a bit underfermented since my sourdough wasn‘t as active as I wished. Should have waited two more feedings (or should have used yeast) probably but it was ok! The outcome of the Pies is a testimony to what an incredible little oven the Ardore is. With the Saputo it‘s the easiest and most comfortable way to get truly fantastic neapolitan Pizza.As simple as that.

Thank you! It was the first pie of the evening that went into the Ardore. Floor Temp was around 450*C-475*C for that one with a bake time of around 60 seconds.

Thanks! In average I calculate in winter time with about 18*C ambient temp. In summer I use about 4-6% Starter. Winter it’s more like 8-10%.

New bake with the Ardore! Again slight underfermented dough but workable! Just a video and a photos from one Pie today. It was the best of the evening anyway...;-) next time around I’ll add a tiny bit of IDY again I think or proof in my Proofing Box that I build years ago to control the temp a little more. Temperatures in winter in my house go down to 15*C which is a little to low for SD I think.
Anyhow that Filetti Pie turned out awesome!
It was 68% Hydration, Caputo Pizzeria, 10% Ischia, 20 Hour Proof half of it in Balls.

Very nice pizza Don!  What are the characteristics of the pizza if the bulk ferment is at 59C?
