New bake in the Ardore today!
Nicely fermented dough. 68% Water, Caputo Pizzeria, 2.7 Salt, 10% Ischia, 21 Hour Room Temp Ferment!
The Saputo Stone just bakes the best bottoms. Having used the Ardore with both floor options I can safely say I absolutely prefer to bake with the Saputo Stone!

Every time I think I just may be getting closer to your pizza another post of stunning pies! Guess I better get back to work  . . .one day I hope to catch up.

Your Pizza is great btw! No need to catch up. I can clearly see your look in all of your Pizza and I bet they taste great!

New bake in the Ardore today!

Thanks Hotsawce! 10 Hours Bulk/11 Balls. Room temp around 19*C in average. Colder during Bulk and warmer during Ball Stage.

Regarding your comment  -  Temperatures in winter in my house go down to 15*C which is a little to low for SD I think.

What happens to the dough if the temp is a little to low?

Thank you SK! If temperature is to low fermentation is working slowed down and the dough and baked cornicione of the Pizza will be less airy and lively as a result of that! Sourdough is expecially picky to temperature and I think works best around 20-22*C. Commercial Yeast is alot more forgiving in that respect.

 A question . .  I like the look of the Quattro fromaggi and wonder which cheeses you prefer, there seems to be a range of traditional cheeses that vary from North to south of Italy. Do you add anything other than some basil and olive oil? I would like to try this one in the next round of practice sessions. Happy New Year by the way, it is fun watching your pizzas from over here!

Those look great. I ordered mine last week. Hopefully it will ship out soon. Apparently they were backlogged and it is taking a while to ship. I canít wait to get it!

Not yet. They were waiting on regulators. I ordered mine on the 10th and as of today, it still hasnít shipped. I asked to have it shipped without the regulator because it seems itís going to be a while before they get the regulators. I was told they were expecting them last week. A week later, still no regulators.

I believe they did post a picture of orders going out and that they got the regulators that were causing the delay.
