Since we haven't gotten a separate freezer yet,  and kitchen remodel is soon, I haven't stocked up on cheese. Been using sliced Boars Head from deli and its pretty good.

Tony, the IDY was all in poolish..but i think it would be okay either way. I've done enough like this to think there does need to be some RTtime before CF to get it going. I'm keeping the CF around 32F

50/50 GM Neapolitan/All Trumps with 2.5% SD, 36 hrs RT fermentation, then held in fridge 8 hrs.  4:15 Blackstone

Toppings were inspired by..and procured at Matt's BBQ Tacos, a terrific and popular..and just- reopened food cart here. Base of WMM, crushed Sclafani, fresh mozz on top, Matt's chopped smoked brisket, and some dabs of their guacamole, refried beans, pickled onions, chopped jalapenos plus a variety of sauces. My first time at Matt's..now I understand the praise!.
