BBQ Chicken Pizza

Wifey wanted a BBQ Chicken Pizza, and this is what I came up with. After doing some research on-line. Found a general recipe of

1/2 cup BBQ Sauce
1 Tablespoon Honey
1/2 bunch fresh chopped Cilantro
1 t Molasses
1/3 cup Brown Sugar

1/4 cup onions ( I opted out of this)
1.5-2 boneless chicken breasts cooked and cubed
Mix the above over med high heat until it starts to boil. Then add to a pizza dough. I used a 12 inch NY style dough, 60% hydration. With a 5 day ferment. Hand kneaded dough.

Cover with Mozz and Gouda- I just used Mozz and half without.

Cooked on a screen.

Came out pretty good. Gouda def would help the cheese side out. Wife was quite pleased. I kept thinking this dough would be really good with some tomato sauce and pepperoni. :-D

If you’d like to see the BBQ pizza recipe from California Pizza Kitchen, it is at The CPK dough recipe itself is at I have the CPK pizza cookbook, and the recipes are virtually the same as in the cookbook. From what I recall, the CPK BBQ pizza is their number one seller. I made the pizza once but found the sauce too sweet for my taste. I liked the CPK chicken/potato pizza much better although it was very labor intensive.

It looks like you are getting the hang of it with the pizza making. Not bad for someone just starting. You are catching on fast.

I love BBQ Chicken pizza.  My recipe is as follows:

BBQ Sauce (I used Bullseye with Guinness)
Sargento 4-cheese mexican blend
very thinly sliced red onion (1/4 of the onion)
Leftover BBQ Chicken cubed

I make a NY style dough using the lehmann recipe and procedures. (last nights pie was from dough made tuesday)

Cooked on my weber grill on 6" ceramic tiles.  The grill was WAY past the 550 degree mark on the thermometer (actually almost back to 0 degrees ;) ) cooked for 4-5 minutes

I'd show pictures, but it was so dang good, it was gone before I got a chance.

Really one of my favorite non-traditional pies.

Here's how I do mine: in this order

dough / skin
mix of gouda, moz, fontina (shredded)
grilled chicken chunks (Tyson is good)
bullseye bbq sauce (even circles with a squirt bottle)
more cheese (gouda, fontina, moz)
red onions (diced)
cilantro (minced)

This may sound nasty, but just trust me!  I mix 1/2 bbq sauce with 1/2 pizza sauce.  It makes it not so bbq-y.

Actually i mix half and half too.  I was hesitant at first, but it does help with the pizza not being too strong.
