Toppings suggestions needed (vegetarian)

So last night I put together a batch of NY style pizza dough using Glutenboy's recipe. However, I neglected to scale back the amounts and now will end up with 8 x 14" pies if my stretching ability is up to par.

Not wanting to waste an opportunity to compare multiple pizzas simultaneously, I am looking for your favorite topping suggestions (incl combos) that would be appropriate for a 0.07TF pie.

Some I have used in the past and enjoy:
1) bell peppers (red & green) - raw, baked or sauteed
2) onions (Vidalia & yellow) - raw, baked or sauteed
3) button mushrooms - raw, baked or sauteed
4) falafel balls


Others I have used and did not like:
Tomatoes
Fried breaded Eggplant


Others I thought of using, but have concerns:
black olives - overpower pizza if used by itself
Frozen broccoli - excess moisture even if defrosted (dont have fresh)

Some vegetarian topping combos that I’ve collected:

Xerxes – Sauteed spinach, feta, mozz, kalamata olives, almonds.

Great Greek -Kalamata olives, banana peppers, bell peppers, feta, mozz,
 
Funghi – Italian crema, taleggio and/or fontina cheese, carmelized onion, mushrooms.

Olive Oyl – Basil pesto, castelvetrano olives, marinated artichokes, mushrooms & ricotta, finished with a squeeze of lemon and black pepper.

Green Valley- zucchini, mushrooms, onions, cherry tomatoes, kalamata olives.

Chris Bianco’s Rosa is probably my favorite- olive oil, hard cheese (parmiggiano reggiano), thinly sliced red onions or scallions, rosemary, pistachio nuts

Roasted/baked eggplant slices are good, but they need only a small brushing of oil when roasted/baked, and have to be the right thickness (about 1/4 inch tops). Too much oil and they end up being soggy and rich, too little oil (or too thickly sliced) and they are dry and leathery.

EDIT - took out tomatoes

I am still looking for a good substitute for god old-fashioned fennel sausage for a Chicago Thin style, not necessarily a 'fake' sausage, but still something with a rich and 'porky' flavor and mouthfeel.

Eggplant and mushroom have some 'chew', but I am still looking.

Squash such as crooked neck or zucchini are great choices as for any watery vegetables you might have a concern about drain well and place in a clean towel to absorb excess moisture....don't over do it with the amount you add, ditto for the green and black olives, onions.

Dates - avocado - arucola - and i see a future for granatapples.

you can probably combine dates with some form of nuts and drop some arucola and have a nice pizza.

those 4 are great for one pizza but maybe not together:)

you have to mix and match, i would say foods that are great to combine in dishes are also mostly nice to try out on pizza...

Artichokes, lots of fresh, chopped garlic, red onions, spinach, olives, cherry tomatoes (post-bake) and olive oil.
