Sausage in 60 seconds?
« on: December 04, 2018, 10:25:42 AM »
I'm going to use some sausage on an NP bake today. Think it'll cook in a minute @950F?

I use raw sausage on anything in my home oven.  You know, NY-ish at 525F or so for five or six minutes, or pan styles for 12 to 15 minutes.  I've always been paranoid about the sausage cooking in a 60 to 90 second bake.  Therefore, I've always precooked the sausage pieces for six minutes or so at 300F until they get to about 130F.

All that said, I'm encouraging you to try the raw sausage in a NP bake and post your results so I don't have to try it. ;D  I'd love to eliminate the precook thing.

It tastes so much better if you don't precook it... Just smoosh it flat...nice and thin, no big pieces and you should be fine.

I believe Craig has said it will cook thoroughly but it may have been at 75-90 seconds. I believe you can safely do it but it will be important to use your turning peel well.

Depends on the thickness I suppose. Keep it at room temperature before bake helps a bit.

Dime-size pieces, not quarter-size pieces, as Tony Gemignani likes to say.

I asked my cat, he was busy putting on his Santa outfit so (as you can see in the photo) he is still thinking about it - I will let you know what he says.

If ground and made myself, I have little worries if it is a bit underdone. Store bought, like others said, small pieces and of course on top of the cheese!

When have you seen me bake a 75-90 second pie?  ;D I do it in 45-50 seconds all the time.
