Focus is NY style but do others too
Preferred Flour (for NY pies) is All Trumps BB
Preferred temperature for NY is 550F, for NP 900+F
Preferred type of yeast IDY

That was a great watch!  I'm really curious what approx hydration they are using on the semolina+water dough.  I've found a good balance for extruded pasta, but not the free-form shapes.

I've made a bit of pasta before but for a lot of the simple shapes I've not really thought it worthwhile, probably as my skills are a bit  lacking  :-D

i have been meaning to make a lot more of the various stuffed types

I had this bookmarked from several years ago. Itís all in Italian but there is a good closeup of the folding and pinching method at about the 9 minute mark.

As Bob Ross is to lalndscapes,  Luca D'Onofrio is to pasta.  This was just what I needed to start the day.  Pure relaxation, pure inspiration, and pure motivation!  The eggs are going to be cracked in 30 minutes...  :)

My second shot at the culurgiones was much better. The dough was really nice to work with. I filled these with roasted beets and ricotta.
