Ezzo Pepperoni 38 or 51mm?

I'm planning on picking up a 25 lb bag of Ezzo Pepperoni from my local distributor.  Which do you recommend for Neapolitan bakes?

dumb question - i make a bunch of homemade pizza and want to snag some ezzo but 25lbs would last me the better part of a year at my current rate of 2ish pizzas per week...can you freeze already sliced pepp for storage in vacuum sealed bags? or will it store in the fridge for extended periods?
