Baking pizza with or without the fan?

Long time since I've been here. I finally got a good quality oven and I also bought a baking stone. Now my oven comes with a lot of modes. But which mode is the best for baking pizza on a stone, should I opt for convection (top and bottom horizontal stripes) or should I go for the fan. And for which height should I go when baking?

In my oven, I like no fan, no broiler, and positioned as high as possible while still having enough room to work. Different ovens are different though, and you should experiment.

What oven did you get?

You have to experiment to figure that out. I've had one (cheaper) oven where I found the best results with convection, and my current (Miele) where I heat it up using top/bottom heat and switch to the broiler element before launching.

You also want to experiment with placements in the oven. Some put the stone up high, some low, some move the pizza around during the bake. I never bothered with moving it around, so I found the best results having the stone at the bottom rack.

that's my assumption too... but there may be a terminology differentiation from his oven manufacturer... like convection turns on an additional heating element with the fan while fan means just the fan

Do you have a particular type of pizza in mind you are tying to make?   I think that will help answer your question.
