Take on Alsatian (vegetarian pie)

I have made an attempt at Alsatian-style pie (Flàmmeküeche) today and really liked the results.

The dough is made with 12 hours RT poolish. The idea of sauce is borrowed from alex_chef2000 (Reply #520 here: https://www.pizzamaking.com/forum/index.php?topic=14506.520). The toppings are parmigiano, cooked (with fig vinaigrette, oregano, black pepper) soya mince, onions, LM mozz.

I've seen numerous threads started by people asking for ideas for a vegetarian pie on the forum and just thought this might be an interesting one.

My 2 cents : the flammekueche is usually made with cream as basis, then onions and "lardons" (French bacon). I add emmental for the pizza. You can made a vegetarian one, but I think it's all about the lardons  :(

This version with creme fraiche and Gruyère from my two favorite Italian chefs is my current favorite (NOT vegetarian):
