As I have said before when I went to Reno Nv for the first time.I was going to buy a pizza
and most of the places that sell pizza all their pies looked very cheddar in color.
I ended up at dominos at the end.....JT

Some cheddars are so mild that you wouldnt realize there was cheddar on the pizza if you weren't told. NJ boardwalk is an example IMO.

When I use cheddar I:
- use a blend of cheddar and mozz
- use some full fat and some low fat. Cheddar has higher fat content compared to mozz and hence more 'oil'. Low fat cheddar has less.
- put the full fat cheddar down as the first cheese, and the mozz last (ie the top of the pie). I dont know for sure if this helps reduce the oil, but seems logical.

I would've thought that cheddar is an acquired taste on pizza, but so far in the small group that I've shared my pizzas with, they prefer my cheddar pies, even when experiencing them for the first time. It's a different experience for sure, but a good one for my tastes.
