Favorite Fennel Sausage Recipe

Was wondering if anyone had a favorite fennel sausage recipe or seasoning mixture they mix in with ground pork.

Iím a big fan of pinched sausage, and much prefer when itís pinched in raw rather than par cooked. Iíve never had Zuppardiís, but their sausage looks top notch - anyone know whatís in it?

Iíve seen recipes that are more complicated but I tend to lean towards the pork/salt/fennel seed variety. No ground garlic or other stuff but I am open to it. Any input would be greatly appreciated! In the past, Iíve used about 2% salt by weight of pork but think I could go even higher...

For me, Garvey's Pizza Factory sausage recipe is as good as it gets.

Here is a similar thread. Lots of ideas there. As I said there (for me): salt, pepper, fennel seed (now experimenting with fennel pollen too), a little olive oil (I wonder how olives would be?), and parsley. Crushed red pepper if Iím going for something semi-hot.

I been doing a 50/50 blend of fennel and anise, the pollen sounds good too! Love the licoricey taste in sausage and pizza!

I don't know about sausage... but my cousin makes the BEST salami... his secret?? He dissolves a whole bulb of garlic in some red wine... he then pours it into his salami mixture and grinds it in. THE BEST salami ever. Not sure if it would work for sausage... but don't see why it wouldn't??

I really really love the Honey fennel/anise recipe from Tony in his book The pizza bible. I tried it on my neapolitan and it is simply amazing.

If the recipe is not readily available on google i can post it for you.
