I've only tried it the one time, but I really liked this Arrowhead Mills Organic AP flour a lot. It's not malted and has higher protein than any AP I've seen before. It made a beautifully smooth and strong dough that was supple and extremely easy to open. The pizza cooked up a beautiful golden brown and tasted fantastic. These are 48-hour RT SD. 62%HR, 2.8% salt. Pretty much my normal dough. 50ish second bakes.

Mozz, crimini mushrooms, parm, S&P, white truffle oil post-bake. It's one of the all-time favorites at the Garage.

No. It's been years since I used any Caputo flour.

Doesn't the Sperry have higher protein count? I read 14 ok their website and on the Arrowhead I get to ~12 (4*3).

Or is that not defined as AP maybe. I don't really know what AP means in the flour properties.

The Sperry is not sold as AP. There is also a Sperry Bread flour that is pretty close to typical AP as far as protein goes.

AP can be anything. There is no standard definition.

Bob's Red Mill also has a retail flour that seems to be similar to the Arrowhead organic AP flour:

Also, for a while Hodgson Mill had a retail AP flour that was also organic, unmalted, unenriched and not bromated but it looks like they no longer have it. In fact, it appears that Hodgson Mill may have been acquired or otherwise has become affiliated with a company called Hudson River Foods where the Hodgson Mill flours will be featured at some point:

I agree. I always wanted to buy local, but the local mill here doesn't make their organic, unmalted flour anymore I don't believe. The Bob's Red Mill organic I can probably find though.

I don't know what the difference will be between these two different types of flour as far as taste and texture   I looked and bobs uses red hard wheat flour where arrow is white flour.

I use this one a lot.  The only unmalted flours I can get nearby are the Arrowhead mills and kroger's "Simple Truth" organic.  They run similarly priced.

I can get caputo in the 50 lb sacks for $29.99, but I don't like buying in large amounts like that in fear of loss of quality.

This was good flour!  That explains why I haven't been able to find it  :(

I use to be able to get 00 at the HEB in Dickinson. They don't carry it any more so I picked up some of this last weekend.  Haven't tried it out yet but it looks like the protein is lower.
