Sadly, my local Walmart only carries the whole wheat version of Arrowhead. :-(

Never hurts to ask, but my experience with Walmart and other "big box" stores is that you have 2 chances.

Slim and none.  And even IF they do start carrying it, it will be SUPER expensive.

Of course, it never hurts to ask...

I use to be able to get 00 at the HEB in Dickinson. They don't carry it any more so I picked up some of this last weekend.  Haven't tried it out yet but it looks like the protein is lower.

Uh ... second item in the ingredients list is ... malted barley flour. :o Probably "slightly" less than ideal for Neapolitan.

Mozz, crimini mushrooms, parm, S&P, white truffle oil post-bake. It's one of the all-time favorites at the Garage.

Hey Craig, awesome looking pies btw.. you're making me hungry ;D Just wondering if you precook your muushrooms a little first? Might be a dumb question but just wondering as I do for my home oven that only reaches approx 500-515 degrees F.

No, I don't, but in a 45 second bake, they don't water out too much.

Since I first tried Craig's 'shroom pie, I ALWAYS make it.  I couldn't count the number of times.  I do it at higher temps also and there isn't much watering off with the raw 'shrooms, a bit maybe.  Friends always love it.  If I was baking at 500F-sh, I'd probably put the sliced 'shrooms in the oven for a bit to drive off some of the moisture.

I'm not a fan of truffle oil (hate those truffle oil burps) so I just hit it with some OO after the bake.  Also, I always add some fresh thyme pre-bake because I like 'shrooms with thyme.

I don't know what the difference will be between these two different types of flour as far as taste and texture   I looked and bobs uses red hard wheat flour where arrow is white flour.

I picked up a 5lb bag of Bob's Organic White AP to try. Possibly this weekend if I'm around home. My closest Walmart didn't have Arrowhead.

Did you feel 62% hydration is pretty good or is it still a fairly wet dough for this type of flour

I was super excited to find it yesterday usually my local Walmart does not stock it and yesterday I seen two bags. For less than a dollar a pound I can't complain




I have one more quick question for you? Do you notice any kind of difference when using organic flour compared to non also with this flower do you notice any difference in taste as far as better compared to Caputo? I've always been curious if flour like this has different taste?

I notice differences in the flours, but I don't know that being organic has anything to do with it.

That's good to hear because I am also using the Ardore. He definitely have to keep the temperatures lower with King Arthur because it is malted

That's ironic, i can't get anything but Caputo for decent nea pizza as far as i know.

Second best is probably Farina tipo 00 granoro and Le stagiani

Guess ill just go for which one works best eventually.

Sounds like you have some great choices actually. I have heard multiple professional pizzaiolos tell me Le 5 Stagioni is much better than Caputo. But itís hard to get in California so I donít have much experience with it myself. I doubt you would find Arrowhead outside the States.
