Pizza romana in wood/gas oven : how to properly bake it?

Hello guys,
I have a PP gas oven and I will make some pizza romana this week-end.
But I was wondering : what should be the temperature of the oven & the floor ? Should the burner be at maximum or minimum ?
Usually I spred my foccacia dough directly in an oily pan, it works fine for the spreading so I don't use the semolina technique. My dough hydration is 85%
