WFO Gluten Free Pizza
« on: July 10, 2019, 12:27:47 PM »
I've read some posts about gluten free doughs and their recipes here, but I'm wondering if anyone has any experience making a good gluten free dough, that's been baked in a WFO? I have a friend that is Gluten free and I would like to make them a pizza soon. I typically fire my oven for a settled temp of 650*F. I can fire less, if need be to achieve lower temps if required. I would appreciate a recipe and some tips if possible. I've been making traditional dough pizzas for years and never attempted the gluten free. Thanks in advance!

I think Craig has done so using Cup for Cup. I believe Hans has made GF pizza in WFO or Ardore. If they do not weigh in here you might search on their names and GF or gluten free.

There is a GF sub-forum.

See my post #53 for the details.  https://www.pizzamaking.com/forum/index.php?topic=36328.40
