First bakes roccbox

 one of my suppliers sofo foods had a drawing on 4 roccbox ovens at their last food show. You had to buy certain products to earn chances to win one of the ovens. I got lucked and picked up a green roccbox. Used it twice and got three pizzas out of it one the first use and two tonight the second session. No knowing the oven I settled on a 750 degree floor then idled the oven till I started to make a pizza. I then turned it up full for the bake. I timed them at 90 seconds.
 I just set up on my truck bed with oven,peels, and ingredients. Very portable and easy to bake in.
 Dough was caputo blue 65% hydration 4 hours bulk, then 24 hours refrigerated. 4 hours room temp before bake.

Nice Larry. I know that you really had your eye on them during the show, can't believe that you won it! I let the temp get to 420C on the guage then full power. The bottom of the first will get finished quick then it settles down if you make more.

By the way, Jeff- got to ask with your location. Thoughts on Mission? I made pizza there for a couple years and miss W-S.

  4 turns and some full rotations with the peel.

Mission is very good! We just moved here a little over a month ago from Chicagoland have been 3 times.
Back to being a civilian pizza maker only.

Good deal. Next time you're there, sit at the counter and look for Peyton, a gruff looking 40 or so white guy behind the pizza line. He's the proprietor and an absolute fanatic/dough expert. I'm sure he'd love to talk to you about anything and everything pizza if he's not busy. Awesome guy and taught me a lot early in my career.

    Bought a lot of product to get the chances to win. more then i needed.

      what power level do you use while you are getting to 420?
