Reinhart + Breville: Bacon, Potato, Herb Oil Focaccia

Based loosely on a recipe from Reinhart's new pan pizza book, this round focaccia was baked in the Breville Smart Oven Pizzaiolo. I think the ability to dial-in a deck temp of 700F and a top temp of 450F has a lot to do with a balanced bake on the top and bottom. The golden, crispy bottom (see end of video) is the star of this dish.

I've always been an advocate for the use potatoes on pies.

I'll try your temps.  It's strange, at NP temps, this oven (for my tastes) is to hot on the bottom.  Like you, for lower/longer bakes I feel the opposite is true
