It has beeb pretty warm here in Denver too.    That looks really good!  Peach sounds good too.

Tonight we have 2 of our grandkids with us, ages 3 and 4. I was interested in recreating something my youngest son and one of his friends made with me ten years ago during peach season. There were some changes from what is written on my note below.
- we made a double batch
- used 4 C half & half, 3 C whole milk, 1 C heavy cream
- I had only 3 small peaches on hand, a couple more would have been better
- used vanilla bean paste instead of extract


It’s not what I would call a premium ice cream but the flavor was good, kids learned a little and had fun (me too) and enjoyed having it as their “sweet treat,” as they call it, after dinner.

I had some scotch the other nite that was SOOOOOOO SMOKEY, I could taste it 2 hours later after only 1 shot. Tasted like it was mixed with liquid smoke and creosote. May be the worst scotch I've ever tasted, maybe the worst booze.......and it was a top shelf scotch :-X

Lagavulin 16?? Pretty much the best whisky, ever!!!  ;D

(Yes I realize the post in quotes is from 2016)

The ice cream looks great also!!

I have a lello as of six months ago. It works very well I love it. Still working on a real good, creamy ice cream recipe. I've read this thread, some interesting ice cream recipes.

i ordered the 4080. ive read some good reviews hopefully it doesnt disappoint

No, I had a hand-crank Donvier for many years. Yes, very smooth. Never had a bad batch come out of the 4080. I guess you could get a batch that isn't smooth if you create conditions that allow ice crystals to form.

an ice cream/gelato blog i follow claims 12-16 minutes for a batch depending on the size. are you seeing similar times?

When I make a custard I pre-chill it in the freezer for a little while prior to using the lello. I've tried this for a couple of hours and for 30 minutes as well. Still a work in progress.

If you haven't done so, try tossing crushed dry ice into the stand mixer with your base.. results are quite awesome, super smooth!  Just make sure you get food-grade dry ice (non-food grade may have had exposure to nasty things, it's been a while since I've done the research, I think mercury?).  I've been doing this for a couple years now, got tired of using the donivier. Note that it's not quite as drastic as using a blast of nitrogen to freeze the ice cream (which is totally rad), but results are just as good. Don't forget to be safe and cautious when handling dry ice.

On another note, there was an ice cream and/or gelato book I ran across years ago, no longer published.  It was quite lengthy, and considered a total bible on the topic.  Anyone heard of this book?  I cannot find the title or old links to it any longer :(

Some friends took me to Creamistry recently, a chain restaurant doing liquid nitrogen frozen ice cream.

I liked the texture of the ice cream, but thought the flavor was kind of lacking. I'm curious if the intense freezing process is harsh on the flavinoids or something and affects the flavor negatively?
