Good Morning!

Are there any Fontana Forni owners on here?  I recently purchased one and I learned quickly that pizza making is a science not a hobby.

I have the Fontana Forni Marinara.  I am planning on getting the Saputo Firebricks for it soon.  I love this oven!!!!!!!

I have a bunch of issues/questions so far. 

1) How do you cool your oven down after using?  I feel it takes longer to cool down than it does to heat up?

2) How often do you clean it?  Mine is FILTHY inside with ash and charcoal after only two uses (I am doing the fire itself wrong)

3) How long does it typically take to cook the pizza?  I feel like I am undercooking the dough but burning the crust

I received my Fontana Forni Mangiafouco a few weeks ago. I ordered the Saputo brick. This oven works great. So far only used gas, it gets to Neapolitan temps in 20 min. I plan to try wood sometime soon, but I sure like the convenience of gas!
