So now you can all rest assured the starting shot will be fired here at the appropriate time to include early morning bakes in places like New Zealand too. :-D

Sk (Scott) here from Atlanta, GA USA.  I am actually in beautiful Tuscany now.  Our Villa has a pizza oven so here gos.  CooP (Supermarket) dough and unknown tomatoes.  Here it is.

Done for me!!

I have good news and bad news.
The good news is that I made a video so I will upload it on Youtube ASAP; the bad news is that there was a hole and even if we don't see it in the video, the pizza lacked some baking time  :'(

I made a regular NP + I wanted to try the pala style in the GFO, the result is still good though!!

Flour 100%
Hyd 80%
IDY 0.02%
Salt 2.5%

Autolyse 2H (flour 100% + Hyd 65%)
Mixing ~8 min (high speed)
300g dough ball

RTF 24H
Dough was ready earlier, put it in the fridge 2H before... But turned out good. Just the problem of the baking time as explained above (the pic is the first one which didn't have the leaking problem  ;D!)
