Possible to make Detroit pizza in WFO
« on: November 07, 2019, 05:20:58 AM »
Hi guys,

I never ate Detroit style pizza and you can't buy it in Belgium.
I have a WFO where I want to make it in, but is this possible?

I'm prepared to buy a nice steel pan from Lloyd.

yes, it works!    I have been making them at work for my employees, just keep the floor temp at 475-525.  I think you will have better luck in your WFO with a pan that doesnt have the nonstick coating.  I have a few different types of pans now and the lloyds pans prefer a lower temperature than pans without the nonstick coating (like the blue steel pans typically found in Detroit)

Agree with Scott. I cook mine at around 525 on the floor.  I linked a Gozney for you that I used the first time I cooked a Detroit in my Passione.
