Friday Night Neapolitan

Hey all, first real post.

I've been following the TxCraig original post regarding the recipe, and have been tweaking it over time using my Ooni 3 with gas attachment.

Recipe for tonight was:

100.00% Caputo Blue Tipo 00
62.50% Water
4.00% Ischia Starter
2.80% Salt

36 bulk/12 ball

I did one margherita, one garlic/mushroom/sage/onion/hot honey (I'd leave out mushroom next time), one tomato sauce+onion+garlic+egg(didn't get a pic), and one goat cheese+onion+garlic+sauteed spinach.
