I know it has been well over a year since I have posted on this thread, and almost as long since I have made a pizza in this style, but we tried it again today. I feel that these may have been the best so far. I credit the great people here for all of my pizza knowledge, and for making this the case.
My wife found some little 7 inch pizza pans at Tuesday Morning and thought they were "cute" so she picked them up. While contemplating what to do with them, she finally suggested Casey's style pizza. I agreed and made these great little pizzas for dinner tonight. We made 8 in all and I will happily be taking one for lunch tomorrow. Everyone got to sauce and top their own. I have strayed from trying to straight up duplicate, but now just embrace the style of the crust. The unique texture of the rim is really what drove this thread, and these little pizza actually have a greater rim to total slice ratio. Also, while Casey's truly has great cheese, I no longer care. Today I used great value PSLM mozzarella, and it was great.
Today I used the following formula.
Vegetable Oil 5%
Sweet Dairy Whey 4%
Single Ball 103g
