High % SD hybrid dough

I made what turned out to be one of my best doughs yet, great flavor and chew.
I have a started I got from breadtopia and fed it with my power flour 13.5%  and feed weekly and itís kept in the fridge

Here is my recipe, itís 50% of flour weight starter

75 g each of starter, flour and water mixed in my KA mixer bowl and let sit covered in there overnight

Next morning I add 178g water, 338 g flour , 9g salt, 5 g EVOO  and 3g IDY.

Mix with dough hook until smooth, break into two 370g balls and cold ferment for 48-72 hours

As you can see I used the SD mainly for flavor but it really added an incredible chew to the dough

I used graincraft 13.5% flour and was thinking of adding some malt next time as well.
