My Neapolitan and Roccbox journey

Hi guys

Well i splashed out and bought myself a Roccbox recently and finally had the chance to give it a whirl on the weekend. To say i was happy and impressed with this little beauty is an understatement!

So my first attempt was a basic pepperoni below and im interested to hear your thoughts and feedback? I did a traditional margherita after that but forgot to take pics lol. sadly that one tore a bit as i was turning it...

My dough recipe came from the PizzaApp app. 60% hydration. i only have IDY. it was about 8 hour ferment on the bench

A couple of questions / plea for advice:

1. The crust was light but i didnt get the nice puffy air bubbles. it wasnt dense per se but it wasnt bubbly. Is that because of the yeast? hydration?

2. you cant see it but there is a tiny tear in the base. the same thing happened with the Margherita.. is that simply a technique issue with the turning peel or is my base perhaps too thin?

i was pretty happy with it. its my first time cooking at these temps so the super fast cooking time had me a little stressed!
