Dropped by Pizzeria Mozza today
« on: December 29, 2019, 06:52:55 PM »
I'm able to make a better crust than they do, but what the ingredients and the rest of the dishes on the menu are stellar, earning them a Michelin star this year.  It was the first time I had the pizza with Goat Cheese, Leeks, Scallions, Garlic & Bacon; mind blown!   I added some 'nduja to the pizza with salame, tomato, mozzarella & Fresno chiles.  I think that I could make something very similar using Trader Joe's Italian Bomba paste and ground pork.  My daughter had the Margherita with added sausage.  It wasn't cheap, which is why it's been a year plus a day since we last ate there.

Pizzeria Mozza is not Michelin starred but if you believe you can make a better pie you should put your money where your mouth is  :chef:

Pizzeria Mozza IS Michelin starred: https://www.viamichelin.com/web/Restaurant/Hollywood-90028-Pizzeria_Mozza-c61b5f46   I said I can make a better CRUST than theirs, which I do, and the bakes I get from my Ardore are superior in every way.  Many of the ingredients they use are not available anywhere but there, which is what sets them apart.

A Bib Gourmand is not a star. Osteria Mozza has a single star.

Fair enough.  The sticker on the window of the pizzeria simply had “Michelin 2019”.  The kitchen for the entire “Mozzaplex” is the same.  A $230 lunch is pretty much the top of the mark for me.

It’s a wood fired oven, but they bake at low temperatures.  I don’t recall the exact temp, but it’s defintely below 600F.

We got a $50 bottle of Sangiovese.  It was an “IGT”,  which they probably purchased for $12.  However, it’s not obtainable anywhere in the US and it was good.

Thanks for the replay jsaras. I've never had a bad meal at the Pizzeria or the Osteria. A very reliable dining experience.
