Dough ball weight in the Pizza Bible
« on: January 06, 2020, 07:03:40 PM »
In The Pizza Bible, the master class calls for a dough ball of 370 grams. In the master dough with starter, the total weight of the dough ball is 820 grams. Initially this would yield 1 pizza. However, the errata sheet changed this to 2-3 pizzas. Two pizzas would yield dough balls of 410 grams. Three dough balls would yield three 273 grams.  So the call for two balls would be considerably in excess of 370 while three would be considerably less. Ordinarily, I would have consulted Thepizzabible.com, but this site does not appear to be working. Can someone shed some light on this apparent discrepancy?
