Really great video on how to assemble a pizza. And he refrained from any obfuscation such as cornmeal.  :-D

Making a Malnati clone (pythonic's) tonight, so this was fun to watch in anticipation of pizza to come. 
The dough there seems slacker than what I'm used to (46% hydration, 21% oil), but maybe that's just an inaccurate observation on my part.

Oh, I agree.  High oil and minimal gluten development.  I've never had a problem (in just the few I've made using Nate's formula) stretching it to fill the pan and up the sides.  46% hydration and 21% oil is plenty extensible.

I was just making the observation (perhaps an incorrect one) that the dough in the video (starting around 0:45) looked like it might be higher hydration, higher oil, or otherwise slacker than I'm used to working with.

But actually I see in Nate's post from August, he's up to 57% hydration (20% oil).

Hey, give him a break! He wiped his hand one time on his apron first so I'm sure that took care of all the trichinosis.

Yikes. I hope he's not the one who teaches proper food handling and safety there.

Here's another good video.  Lots of closeups of assembly.  Gives a good sense of how much dough and tomatoes to use.

I also def call BS on the franchise employee who recently told a forum member that they use 900g of dough per pizza.  No way.  This shows how thin it is as it gets pressed in.  You can even see some pinholing where it's too thin.

Those are commercial deck ovens.  Not comparable to a home oven.  Find the bake protocol for your own oven and recipe(s).  The 75-lb casserole that is DD is very forgiving.  If your 470 works for you, stick with it.

Bought 6 of Lou's Pizza for $115 with free delivery
From the Coronavirus I had to have a few pizzas since my distributor was closed
and I could not make my own pizza.
I liked Los's Pizza but at $19 a pie I am better off making my own.
Butttttt thinking maybe buying another 6 Pies just in case if I need them......JT

I agree.  Pizza is not fast food.  Even so, try feeding 3-4 people at Chick-fil-a for less.
