Converting Apizza Scholls 2019 from CM to KA

Brian uses CM Keith’s best for the preferment. 12.5% protein, Mix of hard red and white wheat

Substitute: KABF 12.7% just red wheat

For the final dough he uses CM Artesian 11.5 hard red winter

Substitute: KA AP 11.7%  hard red winter

I also have CM 00 I could use

How are my substitutions looking?
