Mystery Dough Style! Who has the answer?
« on: July 31, 2020, 03:51:06 PM »
Hey Guys,

Some of you would be quick to say this is standard cracker style pizza.  Its from a shop called "Best of Everything" in Ridgewood NJ.  Any ideas of this dough style?

My simple guess is that it could be a slightly Americanized Roman, pizza tonda. Similar crust, but I'd reckon Americanized by the additional of sugar as the crust looks slightly darker.

Here is another image. You sound right on the roman aspect.  The crust has the roman crunch/glaze to it

Looks like an NJ bar pie to me. Similar to Star Tavern, Kinchley's...

Kinchelys/Pete and eldas are closest I've had to this.  This is even thinner than those two (if you thought that was even possible)
