This week we start demo on Pizzeria DiLauro, an ďeast Coast InspiredĒ shop in Bainbridge, Northeast Ohio. Will update this thread with pictures of progress. After three years on the trailer we are right on track with my timeline to open a brick and mortar this year. As you can see itís going to need a lot of work.

congratulations!  Your life just got 1/2 easier.   I think trailer pizza is one of the  hardest gigs.  much success ^^^

Thanks everyone, the best decision I have made was putting up our signage even though we donít open till later in the year. We have been setting our wood fires trailer up in the parking lot every Wednesday starting at 4 to great response from the community.

Me too!

I don't know if you need it or not, there's a free software I used many times to design plans, it's Sweet Home 3D.
You can then download a lot of designed objects from the Sketch'up warehouse, but you'll need this software to convert files so you can use them on SH3D. I suggest you download and convert as much objects as you can because Sketch'up has only 1 month free trial.
Another solution is to take the objects already available in SH3D and modify them (size, textures...) to make what you need.
Either way, for a free software, I think it's a good one.

That is a great idea.   We set up our shop for a couple months before opening.  Most places paper the windows but I left them alone so people could watch it come together, posted photos of our pies, articles on us, etc.  and I could talk to people looking  in the window.  I had to dial in my recipes being at 5,500 ft, no humidity, no bromated flour available, and using Lake Tahoe water from our tap.  I made test bakes and gave them away to the businesses in our center.  That brought a lot of media attention to us and we opened with a bang.

This is the most exciting part, mobile is very very hard work. Canít wait for long days in the restaurant that end with me pulling in my driveway without two hours of work to still do.

Very luckily I worked with an architect on this project, because although that program looks awesome, there is no way I would be able to figure that out! Iím surprised I know how to post on this forum!

Absolutely, with the signage up everyday Iím up there people are stopping in all day wanting to know whatís coming.

My wife has been in this building for about 6 years, in an upstairs space with her permanent makeup studio. This March  she finished buildout on her new space that shares a wall directly next door to the pizzeria. Should be a great place to raise the kids together.  We now share the entire corner of the building. This fall my brother will be taking the space directly above the pizzeria with his newly 2020 launched cpa Firm.
