So new to the forum. Got a charcoal gravity fed grill here that I have been making a variety of BBQ on and figure next step, have some fun with pizza!
For me, I am a fan of this on particular place here called Duanes House of Pizza!

- the pepperoni is placed under the cheese
- the cheese is sliced cheese slices the cover the whole pizza with
- the crust only has a crispiness to the outer edge, the bottom is general slightly soft, foldable and thin
- When cooking it appears they use two sections of the oven, lower one first, upper one next
- Pizzas cook for probably 10-15 minutes, and they are very thin
This is what I am wanting to replicate if possible. wanting to know the following:
- What pizza do recipe would fit these conditions
- What kind of cooking temp would be good to use
