I normally cut it small and cut away most of the fat just leaving some around the meaty pieces.  When it goes into a hot oven you can see how bubbles form on the surface and if the oven is hot enough it comes out nice and crispy.  I really like it on a white pizza with truffle oil.

Do you leave it in big chunks or small bits?

Well... lookwise I began to pay more attention to little details while assembling the pizza.... and really looked up for some cool references I liked.

I also found my sweetspot regarding fermentation / maturation and process (and also included 3 sets of Strech and folds).
 
I got more familiar with my new gas oven and how to keep temperature steady (Have been baking pizzas every sunday since I got the oven).

Tomorrow i'm gonna bake my first biga pizza (30%). The smell is amazing! Hopefully looks and taste will be too....lol

Wifey set up beautifully.
Pizzas were awesome!! (Caputo Nuvola / 65% / 36h RT)
Just return my brand new oven to get the larger one. 😍🤘🍕
