Homage to Pizzarium's mortadella pizza

I love having something somewhere and really loving it to the point where I want to create it myself. Visiting Bonci's Pizzarium gives the home pizza aficionado much to think of.
The fennel pollen was my own addition.
Pizza Pala done half rosse and half with amazing mortadella, freshly made burrata and organic fennel pollen.

Bonci is an innovator that has been doing a lot for the Roman pizza in teglia / alla pala.  I've read his book pizza hero, where he explains how he fell in love not only with pizza, but the whole dough/baking experience.  He advocates for using high quality / fair trade ingredients.  You can have a look at: https://www.bonci.it/media/

I think the English book he put out in 2013 (Pizza: Seasonal Recipes from Rome's Legendary Pizzarium) is out of print. I suggest trying to look for a used copy. Maybe ebay. He's got an older book but it is in Italian.

I think Pizza Hero is only available in Italian, I bought mine from amazon.it.
