“White Base” on Ciro Salvo’s Pizza 50 Kalo

A Curious mind needs some help.
I do like Ciro Salvo’s Pizza, no regrettably not in person, but the pictures and descriptions, I have not had the opportunity to eat there. As I peruse the downloaded menu the term “white base” pops up so often and in viewing their site on FaceBook and watching the videos, I can see the addition of what looks suspiciously like a “white base” - some screen captures below, hopefully legal!


When I want to make a white pizza quite often it is a combination of cheeses, not a “sauce” and the base is too dense. I have tried cream sauces, the best has been Arne’s Scarpetta with the piped cream sauce, but as I look at the videos and the pictures below, the base looks like whipped cream, light and fresh.


If you have any experience in eating at 50 Kalo, or know of the “white base” I would really like some assistance. Thanks!

For all the world that looks like creme fraiche. Bet it is something similar ; I use creme fraiche instead of mozz in my mushroom pies.

It might be simply whipped heavy cream. That's what Nancy Silverton uses for white pies at Mozza and it works great.

That looks super heavy for a cream sauce.  Maybe ricotta for a calzone?  Although in the bowl it looks too creamy for ricotta.

I wondered at the calzone, but was pretty sure somewhere in the videos I have watched, perhaps that one the fellow adding squash blossoms to the white base for one of the pizzas not calzones.
So wish I could visit. I previously mentioned my plan, now Nixed by COVID, we were headed for Paros Greece, from Vancouver a stopover in London. Had it mapped out, tube or Taxi from Heathrow to London, dinner at 50 Kalo, taxi back and fly out at 6 AM to Greece. One of us thought that a tad silly, lucky? Flights were cancelled. Closer than Naples though!

Could it be that "white base" just means no tomato? And that the "white" is not a common base they use for all but instead could be simply mozzarella or ricotta or cream or some other sauce, depending on the particular pizza?

One example from the menu, it says white and I don't think I would expect any additional "whiteness" on this other than what's explicitly stated:

CUORE DI PROSCIUTTO COTTO E CREMA DI PARMIGIANO € 8,50
Bianca con fior di latte di Agerola, culatello cotto di coscia di suino italiano senza
additivi, crema di Parmigiano Reggiano DOP 24 mesi, olio extravergine DOP
Colline Salernitane Torretta aggiunto a fine cottura


The zucchini pie looks like it has ricotta (but is not indicated as "white" in the menu I found, so I could be wrong):

RICOTTA, FIORI DI ZUCCA E SALAME € 9,50
Ricotta di latte nobile, fiori di zucca, salame irpino, fior di latte di Agerola, olio
extravergine DOP Colline Salernitane Torretta aggiunto a fine cottura

Just a thought. :)

I suspect you are right Arne!  It probably means that it doesn't have tomato, but they haven't been consistent when making the menu.  I'd go by the ingredients they list for each pizza.

I suspect Arne is correct, different menu items have different cheeses.  However, the bowl of soft white cheese in the picture very well may be Ricotta di Bufala.

There is a really good Italian fresh cheese called stracciatella.  IIRC it's made from shredded curds and double cream, but you can come very close by shredding mozzarella and mixing it with some double cream.  It's very good on a white pizza (also just on a cracker or with a spoon). :D

Don't know how well it would work in the oven but I'd suspect well, I've added it post bake.

Thanks for that Crawsdaddy, how did the creme fraiche survive the heat of the bake? I would like to try my sausage mushroom Taleggio with that as a base

It works great, no problem with heat. Next time I have taleggio , I am trying your sausage mushroom--sounds delicious

Now I wish I had tried a white pie at 50 Kalo.

Here's one I made with heavy cream whipped to soft peaks as a base.

Thank you Hans! I, too, wish you had had a white pie at 50 Kalo for both of us! I would like so much to have a first class pizza, sketchy seems to be the style here!
I am going to try a Creme Fraiche, when I find a source . . .but still the white base intrigues me . . . .

Looks WONDERFUL, Jon. Makes me want pizza for breakfast. Oven is heating now and dough is in balls.  The only thing I do different on this pie is I use truffle infused olive oil.
