Cudighi Sausage Recipe???

I know its been a while for me to chime in here, LIFE I guess.
Home renovations, wifes shoulder surgeries, etc etc...
I have tried to keep up with the posts though!!

Anyone have a recipe for the Italian sausage called
Cudighi??? (could-a-gee)
My friends dad and grandfather have one but will not give it up?
Family secret. Gotta wait for some years more to get theirs.
Already did a google and found some that might match up to what is out there.
Just wondering if anyone on the list has a recipe?

Here is the recipe that my family uses. I am from the central upper penninsula of michigan and have found that you cannot find this below the bridge so I have had to make it myself when I can't get up there to get it from the folks. I am curious to know how you heard about this sausage because almost noone I know has ever heard of it before.
10# pork butt ground coarse
1 cup dry red wine
2 cinnamon sticks
4-8 garlic cloves (I like garlic so I use the most)pressed
Boil these three ingredients together for 5 minutes and cool
Mix together and add to meat gradually
1/2 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
1/2 tsp mace (I couldn't find this spice so I skipped it and it still tastes great)
1 1/2 oz. salt (a little over 1/8 cup)
1Tbsp black pepper
mix in wine mixture in 2 to 3 additions after all spices have been mixed in well. You can strain the wine mixture if you don't want the purple pieces of garlic in you sausage but I love the garlic so I leave it in and just remove the cinnamon sticks.
