You can roll out or use a press initially, but they have to be finished by hand stretching to get to the desired thinness.

The second video, in particular, is great.

What I got from that...

1000g flour
250g fat/shortening (25%)
unknown water amount   ??? What was the hydration?

All of them look fantastic. Very excited to try Bill's recipe and experiment further.

By the way - I think sonoratown uses a heated press. I've never seen anything like that?

She started with a liter of water, and used about 3/4 of it.
