Greek Pizza - Some history
« on: September 22, 2022, 01:20:38 PM »
I live in Fairfield County, CT which is situated between NYC and New Haven, CT,  both considered by many to be the nation's pizza centers. However, I grew up in the New London area of Connecticut where most of the pizza is called Greek pizza. There have been a couple of good discussions here about Greek pizza and I am still on a quest to replicate the pizza I grew up with. I was doing a list of New London pizza houses to go visit and came across a few articles and a video that I thought was worth sharing. Little did I know that my home area of New London is considered the beginning of Greek pizza as we know it today. If fact, there are a couple of pizza places in Mass. that promote "New London" style pizza. You will see this in the video of one of the articles.

To me Greek pizza as described in the articles is pan pizza with two types of cheeses and has a cornice (bone). I know that the famous MA bar pizzas are sometimes referred to as Greek and probable are an evolution of the original as they seem to share many of the same characteristics, with the exception of the cornice. But to me, it must have the crust to be truly Greek – as I know it. I am by no means an authority but I do have experience. To date myself, I was there in the 60's and all pizzas had a crust. Anyway, here are links to the articles. Enjoy.

There is a stickied Greek Pizza thread which is a treasure trove of resources for Greek style pizza.

After absorbing everything hammettjr and others had to offer in that thread I was making greek style pizzas like this:
