I like Mack's. When I'm there I go to Mack's and never Sam's. It's possible that I'd like Sam's better, but it seems more NY style (I recall reading that they use Grande), and I'd prefer to get something more unique/local (ie cheddar and the sauce swirl).

Thanks for your thoughts!  Good to hear you like Mack's.  I did try Sam's somewhere on this thread and thought it tasted bland, although it looked good.

Thanks Zeppi for Dave's reviews of Mack's Pizza and Sam's.  Interesting that Dave thinks Manco & Manco and Maruca's are really good boardwalk style pizza's, and Mack's falls below Manco & Manco, when they both are basically the same.  Guess Dave might have gotten a little baked pizza there, or something else.

When I made pizza's all of mine weren't exactly the same either.   :-D

was an explosion of flavour for taste buds  , oh well , I think that when he sees too much oil , it looses a lot of points.

Mack's pizza is more greasy sometimes.  Yes, an explosion of flavor.  Think Mack's uses pretty much oregano in their sauce and their sauce is a little on the sweet side.  My sauce I used at market wasn't close to Mack's.  It was fairly complicated and that doesn't mean it was the best either.  :-D  Just used tips here on the forum, and from a pizzeria I visited in Mt. Joy.  Also used November's MAE method.

You can always add some sugar or other sweetener if you think your sauce isn't sweet enough.

Hi Mark,

I did find some more about what cheese Duke Mack's in Atlantic City and Marucas in Morrisviile in Pa. used. 

Water introduced me to a man that came into his pizzeria.  We sent PM's.  Marucas used only cheddar and so did Duke Mack's in Atlantic City.  The cheddar came preshredded to Duke Mack's from another location.  The man worked as a pizza man from 1976-1980 at both places.  The man also told me that Marucas was related to Mack' and Mack and Mancos.Hope that helps you some with Old Forge pizza's.

I am doing okay, but have some problems since getting old.

I don't have Mack's pizza altogether figured out. :-D. I didn't find out the exact brand of cheddar they use.  The cheddar I used at market isn't available to me and even if it was, it was branded in different names when I could purchase it.  That's a long story too.  I did my own dough at market, from learning her on the forum and my own sauce.

Norma, the guy that helped isn't the pizza review  guy, is it? You are talking about 2 different people right? I know the guy that does the reviews, not personally. JUST a couple times conversing about some places.  The guy that helped you out is the other guy?

I lost my house there. They had a huge storm that blew down the neighbor's evergreen trees  onto my home and stairs to the front door. I was getting fines from the town and didn't know what for under they sent me a picture! So I hired a place to cut the grass and told the neighbor they are responsible for their trees and when the grass cutter went there to cut the grass. he said the back door was wide open!

Somebody took all the copper wire and the baseboard radiators for the furnace!

I was pissed at my cousin who was supposed to be taking care of it, and my ex gf said I should call him and bury the hatchet already so I tried looking him up on Google and it said HE DIED IN NOVEMBER! So I tried looking up his wife and Google said SHE DIED IN FEBRUARY 2022!

So I lost my house and my 2 favorite cousins! NOTHING TO GO THERE FOR ANYMORE!  TO MAKE MATTERS WORSE MY DOG JUST DIED LAST MONTH!

Mark,

This is the man I was referring you to.  Nepal Pizza Reviews and other places on the web.  He reviews pizzerias in the Old Forge area and he helps people to make different styles of pizza.  I can't give you the direct links cause am working on setting up my new computer.  Just have my cell now, so screenshots us all I can provide. 

As for the people that helped me here on the forum to learn about making a boardwalk style, there are many members that helped.  To name a few, it would be Peter, the late Tom Lehman, Craig and so many more.

Sorry to hear about all of the problems with your home.  Blessings in the future.

Yep! I only knew him as Jim. SOME of the pizzerias aren't real pizzerias but are taverns since the 1920's that also had a kitchen! That area also was a huge part of New York city's food-chain supply,  providing a huge amount of its TOMATOES! And unfortunately,  when it comes to the cheese they use, their lips are sealed! Some say it could be Cooper's, some say it could be Brick cheese (which also happens to be the cheese used on DETROIT STYLE!) and one supermarket merchant in Old Forge even told me to try Meunster!
Unless Jim's been dumpster diving for boxes, we won't find the type cheese on Old Forge pizza... and that may include all of Wyoming Valley (PA), like Sizzle-Pi and Pizza L'oven and Victory Pig too!
