I'm stepping out of the newbie box here with potato skin pie
Ok some times when I' warming up the oven to make pies I will throw in a some potatoes to cook. I like to dice them for Potatoes O Brian for breakfast, or make potato skins.
Last night I could decide what I wanted to have pizza or potato skins. so I make a potato skin pie.
after cooking the bacon and removed it to drain. I poured the fat off and there was some brown residue left it the pan, so added a little evoo to brush on the the skin. Baked three minuets (you will see in the pics.) then added a little jack and extra sharp cheddar cheese then the potatoes / that had been diced and browned in a pan in vegetable oil till light brown. Then the bacon and more cheese. I wish I had some spring onions, but out of stock boo hoo. After the pie baked I took a sandwich baggie with some sour cream in it, cut the bottom corner off to dispense the sour cream on top of the pie. To my surprise the pie was quite tasty for a experiment, and would make this again. I know this is a weird pie but it wasn't bad either.
