Aiello's of Pittsburgh -- Hailing ScottR

Scott, any idea how they make their sauce?  I know they start with San Marzano's and run them through a tomato press.  I'm guessing they simmer it, but I can't quite get a handle on whether he's using just oregano or using both oregano and basil?  There may be a touch of garlic, but I'm not sure.  Any ideas?
