The Bear's take on "Mexican Pizza"
« on: April 07, 2011, 09:44:18 PM »
OK, it's not a traditional pizza, and it's not made with normal pizza dough or tortilla chips.  But it's mighty tasty.  Give it a try:

1 1/2 cups flour;
1/2 cup yellow corn meal (I use corn grits or coarse ground cornmeal)
3 teaspoons baking powder
1/2 teaspoon salt
1/3/cup shortening
3/4 cup milk

1 lb. ground beef (I use ground chuck)
1 clove garlic, minced
1/4 teaspoon salt
1/2 teaspoon EACH oregano & cumin (more to taste)
1 15 oz can refired beans
1 9 oz jar or bottle taco sauce
1 4 oz can green chilies, chopped or diced
3 green onions, sliced
2 cups shredded cheese (I use half sharp cheddar, half Monterey Jack)

Mix flour, cornmeal baking powder, and salt.  Cut in shortening until mixture is crumbly. Mix in milk with a fork until dough forms.  Turn dough onto floured board and knead until smooth.  Place dough in bowl and place bowl in refrigerator.

Cook ground beef and garlic in skillet, draining off fat.  Sprinkle oregano and cumin over meat and mix.  Drain off all fat.

Preheat oven to 400 degrees.  Roll dough into circle and place on pizza pan.  Spread refried beans on dough, then cover with ground beef mixture. Pour taco sauce over meat. Distribute green onions and chilies over taco sauce.  Top with cheese.  Bake 20 minutes or until crust is golden brown and cheese is bubbling.

That's the basic recipe.  Variations I've tried have included substituting chorizo for some of the ground beef and switching up the cheeses and spices.
